Awesome Appetizers – Corn Cakes by David Goehring
Many of the best appetizers are those that few people think of. Old standbys such as chips & dip and veggie trays are fine, but there are plenty of unique foods to try.
Awesome Appetizers
Next time that a meal calls for an appetizer, try something creative like an Orange Salad or Corn Cakes. Here are five awesome appetizers and recipes for your next party.
Orange Salad
This Brazilian treat calls for peeled orange slices with salt, pepper and sugar. It has a unique tangy taste that’s perfect for the beginning of a party. Adventurous hosts might want to experiment with a variety of different fruits and spices.
Corn Cake
Those who liked the unique South American flavor of orange salad might want to try making a corn cake. Corn, butter, eggs, sugar, flour and coconut milk can be combined to make a fluffy cake that can be cut up and left out for guests. As well as an appetizer, it makes a perfect side dish for dessert.
When baking a corn cake, one should periodically test it with a toothpick. When it comes out clean, the cake is done. An 11 ounce can of corn can usually make enough cake to provide 12 slices on the appetizer tray.
Potato Latkes
Potato Latkes Topped with Sour Cream
Latkes are a staple appetizer for any Chanukah party, though people outside of the Jewish community are now starting to experience this famous kosher treat. Grated onion and potato chippings can be combined with an egg to form a batter ready for frying. Remember to flip the mixture once or twice in the pan until it’s brown and crisp on both sides.
Most people like to mix salt and pepper into the batter before frying. Some hosts will top their pancakes with sour cream while others prefer to serve them plain. They’re fun to eat either way.
Badam Pistaz Barfi
While the name might be difficult for westerners to say, these Fijian nut candies are really unique. They’re perfect for individuals who like to walk around with a tray to serve individual appetizers to their guests. After the cooking process is complete, they can be cut up into little squares and some people might want to put toothpicks in them.
Ground cardamom can be hard to find, but it gives these candies their unique flavor. Almond extract can be mixed with ground almond to increase the earthy taste. Amateur chefs should be careful not to use instant pudding mix when making this recipe.
Fatir Flat Bread
Hosts who want to give their party an exotic flavor might look to this classic middle eastern recipe for inspiration. Sadly, authentic barley flour is often challenging to find in the United States. Flour tortillas baked over a mixing bowl will copy the shape of fatir, which is useful for anyone who can’t find authentic ingredients.
Some cooks use a wok to ensure that the dough takes the proper shape. While it’s awkward to bake with one, there are ways to do it. Serving something this unique at a party certainly livens things up.
